Toasted Sesame Ahi Tuna Poke in Lettuce Cups

Ingredients

  • 1/2 lb. sushi-grade ahi tuna
  • 1/3 cup Soy Vay® Toasted Sesame dressing
  • 2 scallions
  • 1 avocado
  • 1/3 cup chopped macadamia nuts
  • salt and pepper, to taste
  • 6 butter lettuce leaves

Prep

  • 1.
    Dice the tuna.
  • 2.
    In a large mixing bowl, toss the fish with 1/3 cup of the Toasted Sesame sauce until evenly coated.
  • 3.
    Cover and marinate in the fridge for 30 minutes, or up to 4 hours for more flavor.
  • 4.
    Thinly slice the scallions.
  • 5.
    Dice the avocado.

Cook

  • 1.
    Gently fold the scallions and avocado into the tuna mixture.
  • 2.
    Fold in the macadamia nuts.
  • 3.
    Season to taste with salt and pepper.
  • 4.
    Scoop the tuna mixture into the center of each of the lettuce leaves.
  • 5.
    Serve immediately.
