Toasted Sesame Quinoa Salad with Zucchini

  • 1/2 cup chopped almonds
  • zucchini (or 1 cup diced)
  • 1/2 large red onion Show video
  • 1 cup multicolor quinoa
  • 1/2 cup Soy Vay® Toasted Sesame Dressing
  • salt and pepper, to taste


  • 1.
    Toast the almonds in a large ungreased frying pan over medium heat.
  • 2.
    Dice the zucchini and red onion.


  • 1.
    Prepare quinoa according to package directions. Stir in the zucchini during the last 5 minutes of cooking so it becomes tender.
  • 2.
    Remove from the heat and transfer the quinoa and zucchini into a large mixing bowl.
  • 3.
    Stir in the red onion, toasted almonds and Toasted Sesame sauce.
  • 4.
    Season to taste with salt and pepper.
  • 5.
    Serve immediately at room temperature or refrigerate until ready to eat.
