Sweet Shrimp & Vegetable Quinoa Bowl

Ingredients

  • ½ cup quinoa
  • ½ yellow onion, diced
  • 1 Tbsp olive oil
  • 1 lb shrimp (peeled, tail off), approx. 16 shrimp
  • ½ cup frozen peas and carrots mix, thawed
  • ¼ cup Soy Vay® Asian BBQ Marinade & Sauce

Instructions

  • 1.
    In a medium sauce pan cook quinoa according to package instructions and set aside
  • 2.
    In a large sauté pan, sauté diced onion in olive oil on medium heat until browned
  • 3.
    Add shrimp and cook, stirring periodically until thoroughly pink
  • 4.
    Add peas and carrots, cook for 1-2 minutes
  • 5.
    Stir in Soy Vay® Asian Honey BBQ Marinade & Sauce
  • 6.
    Turn off heat and add quinoa, mixing carefully
  • 7.
    Serve immediately
