
Sweet Shrimp & Vegetable Quinoa Bowl
Ingredients
- ½ cup quinoa
- ½ yellow onion, diced
- 1 Tbsp olive oil
- 1 lb shrimp (peeled, tail off), approx. 16 shrimp
- ½ cup frozen peas and carrots mix, thawed
- ¼ cup Soy Vay® Asian BBQ Marinade & Sauce
Instructions

1.In a medium sauce pan cook quinoa according to package instructions and set aside

2.In a large sauté pan, sauté diced onion in olive oil on medium heat until browned

3.Add shrimp and cook, stirring periodically until thoroughly pink

4.Add peas and carrots, cook for 1-2 minutes

5.Stir in Soy Vay® Asian Honey BBQ Marinade & Sauce

6.Turn off heat and add quinoa, mixing carefully

7.Serve immediately
