Buckwheat Soba Sesame Noodle Salad

  • 8 ounces dried buckwheat soba noodles
  • 1/4 cup Soy Vay® Toasted Sesame Dressing & Sauce
  • 1 tbsp sherry vinegar
  • 2 green onions
  • 1 clove garlic
  • 1/4 cucumber
  • 1 yellow or red bell pepper
  • 1 avocado (for garnish)


  • 1.
    Cook the noodles according to package instructions. Be careful not to overcook.
  • 2.
    When the noodles are done, drain and rinse under cold water to wash away any extra starches.
  • 3.
    Thinly slice the green onions.
  • 4.
    Mince the garlic.
  • 5.
    Thinly slice the cucumber into half moons.
  • 6.
    Core and cut the bell pepper into thin strips.
  • 7.
    Slice the avocado into strips.


  • 1.
    In a large mixing bowl, whisk together the toasted sesame sauce, vinegar, green onions and garlic.
  • 2.
    Add the noodles, cucumber and bell pepper to the bowl and toss to coat.
  • 3.
    Divide between bowls and tuck some slices of avocado into each bowl for garnish.
