
Buckwheat Soba Sesame Noodle Salad
Ingredients
- 8 ounces dried buckwheat soba noodles
- 1/4 cup Soy Vay® Toasted Sesame Dressing & Sauce
- 1 tbsp sherry vinegar
- 2 green onions
- 1 clove garlic
- 1/4 cucumber
- 1 yellow or red bell pepper
- 1 avocado (for garnish)
Prep

1.Cook the noodles according to package instructions. Be careful not to overcook.

2.When the noodles are done, drain and rinse under cold water to wash away any extra starches.

3.Thinly slice the green onions.

4.Mince the garlic.

5.Thinly slice the cucumber into half moons.

6.Core and cut the bell pepper into thin strips.

7.Slice the avocado into strips.

1.In a large mixing bowl, whisk together the toasted sesame sauce, vinegar, green onions and garlic.

2.Add the noodles, cucumber and bell pepper to the bowl and toss to coat.

3.Divide between bowls and tuck some slices of avocado into each bowl for garnish.
