Asian Honey Cod with Mushrooms & Peppers

  • ½ yellow onion, diced
  • ½ Tbsp olive oil
  • 4 ounces mushrooms, sliced
  • 1 green bell pepper, diced
  • ½ cup Soy Vay® Asian BBQ Marinade & Sauce
  • 2 cod fillets (thawed), approx. 6 ounces

    In a large sauté pan, sauté diced onion in olive oil on medium heat until browned
  • 2.
    Add mushrooms and green bell pepper and sauté, stirring periodically for 5-10 minutes or until tender
  • 3.
    Stir in Soy Vay® Asian Honey BBQ Marinade & Sauce
  • 4.
    Move vegetable mixture to the edges of the pan and add cod fillets so they rest on the bottom of the pan. Cook 5 minutes, flip fillets over and cook for 5 more minutes.
  • 5.
    Serve fillets on a plate with vegetable mixture and sauce poured on top.
  • 6.
    Serve immediately.
