Asian Honey Chicken Cashew Lettuce Cups

Ingredients

  • ½ yellow onion, diced
  • ½ Tbsp olive oil
  • 1 red bell pepper, diced
  • 2 Tbsp cashews (unsalted)
  • 8 ounces ground chicken
  • ¼ cup Soy Vay® Asian BBQ Marinade & Sauce
  • 4-6 leaves of butter lettuce
  • 2 green onions, sliced

Instructions

  • 1.
    In a large sauté pan, sauté diced onion in olive oil on medium heat until browned
  • 2.
    Add bell pepper, cashews, and ground chicken and stir periodically until chicken is thoroughly cooked (3-5 minutes)
  • 3.
    Add Soy Vay® Asian Honey BBQ Marinade & Sauce and cook 1 minute
  • 4.
    Scoop 2-3 Tbsp. of chicken mixture onto each lettuce leaf, garnish with green onions.
