Garlic Beef & Asparagus Stir-Fry

Ingredients

Prep

  • 1.
    Prepare rice according to package instructions.
  • 2.
    Trim the ends off the asparagus and cut the spears diagonally into 1 inch lengths.
  • 3.
    Slice the steak into thin strips, cutting against the grain.
  • 4.
    Heat the oil in a large frying pan or wok over high heat.

Cook

  • 1.
    Cook the flank steak until browned on all sides; about 4 minutes.
  • 2.
    Season with salt and pepper to taste.
  • 3.
    Remove the meat from the pan with a slotted spoon.
  • 4.
    Drain the fat from the pan.
  • 5.
    Add the asparagus to the pan and cook until tender, about 3 minutes.
  • 6.
    Return the meat to the pan and add in the Hoisin Garlic sauce and cashews.
  • 7.
    Stir until everything is thoroughly coated and warmed through.
  • 8.
    Plate the stir-fry over rice.
  • 9.
    Serve immediately.

But the next year I made something else and everyone was really upset and said it was the one thing they were looking forward to. Have made it ever since. Awesome and really easy.
