Seafood Citrus Salad

Ingredients

  • 2 heads of butter lettuce (about 8 cups chopped)
  • 1 bunch watercress
  • 1 green apple
  • 1 avocado
  • 1 grapefruit
  • 12 medium shrimp
  • 1 Tbsp. olive oil
  • 2 Tbsp. Soy Vay® Citrus ‘N Ginger Dressing & Sauce

Prep

  • 1.
    Chop the lettuce, watercress, green apple and avocado.
  • 2.
    Peel and segment the grapefruit.
  • 3.
    Clean and devein the shrimp (if necessary).
  • 4.
    Heat the olive oil in a large frying pan over medium heat.

Cook

  • 1.
    Sauté the shrimp until cooked through.
  • 2.
    Arrange the lettuce, watercress, apple, avocado and grapefruit on a plate and top with the cooked shrimp.
  • 3.
    Dress with the Citrus ‘N Ginger sauce.
  • 4.
    Serve immediately.
