Easy Won Ton Soup

Marian C., Eureka, CA

4 quarts water
1 package Lipton Instant Onion Soup Mix
1 bunch scallions
Baby spinach leaves, washed, stems removed
1 cup Soy Vay Veri Veri Teriyaki
14 oz package firm tofu, cut in 1/2-inch cubes

40 Won Ton wrappers
1/2 lb hamburger or sausage
1/3 cup Soy Vay Veri Veri Teriyaki
1 tsp crushed dried red chili peppers (optional)

Bring water to a boil in a large soup pot. Add onion soup mix, scallions, spinach and Soy Vay Veri Veri Teriyaki. Reduce heat and simmer for 5 - 10 minutes. Add tofu.

To make the won tons: In a small bowl, mix hamburger or sausage with 1/3 cup Soy Vay Veri Veri Teriyaki. Place about 1 teaspoon in won ton wrapper and fold according to package directions. Place filled won tons in soup stock and simmer until tender and meat is cooked, approximately 20 minutes. Serves 8 - 10.
