Far Out Chicken Teriyaki

3 lbs. chicken drumsticks or thighs
1/4 cup Soy Vay Veri Veri Teriyaki
2 Tbsp. rice vinegar
2 Tbsp. Chinese mustard (substitute Dijon if needed)
1 Tbsp. Chinese Duck sauce (or use apricot jam)

Put the chicken in a flat baking dish large enough to hold it in a single layer. In a large measuring cup, whisk together the remaining ingredients. Marinate the chicken for at least 30 minutes and up to 24 hours, if time allows, flipping it once. Preheat the oven to 450 degrees. Bake for 35 to 40 minutes, flipping it once, until it is tender (and a meat thermometer registers 170 degrees). Serves 8.
