 Cashew Chicken Salad
1 lb. boneless, skinless chicken breasts, poached and cooled
1 (8 oz.) can whole water chestnuts, chopped
2 green onions, sliced
1 stalk of celery, chopped
1/4 cup Soy Vay Cha-Cha Chinese Chicken Salad Dressing
1 carrot, peeled and chopped
1/2 cup diced red bell pepper
1/2 (2 oz.) bag salted cashews, coarsely chopped
whole cashews
Cut cooked chicken into 1/2 inch pieces and place in medium bowl with remaining ingredients: toss well to coat with dressing. Let chill several hours, stirring occasionally. Place on lettuce leaves to serve and sprinkle with additional cashews, if desired. Makes 4 servings.
