Long Life Tofu and Veggie Noodle Stir Fry

Ingredients

  • 1/2 lb. soft egg noodles
  • 2 Tbsp. vegetable oil, divided
  • 1 cup cubed tofu
  • 1/2 red pepper
  • 3 green onions
  • 1/2 cup snow peas
  • 1 package of shiitake mushrooms
  • 2 Tbsp. Soy Vay® Hoisin Garlic Marinade & Sauce

Prep

  • 1.
    Prepare noodles according to package instructions.
  • 2.
    Drain and rinse to cool.
  • 3.
    Cube the tofu.
  • 4.
    Remove the stems from the mushrooms.
  • 5.
    Chop the mushrooms, red pepper and green onions.
  • 6.
    Heat 1 tablespoon of the oil in a large nonstick frying pan or wok over medium heat.

Cook

  • 1.
    Stir-fry the noodles until warmed through.
  • 2.
    Remove from pan and set aside.
  • 3.
    Add the rest of the oil to the pan and cook the tofu until it turns slightly brown and crispy.
  • 4.
    Add the mushrooms, red pepper, green onions and snow peas and cook until tender, about 5 minutes.
  • 5.
    Stir in the Hoisin Garlic sauce and cook until everything is evenly coated and warmed through.
  • 6.
    Place the vegetables over top of the noodles.
  • 7.
    Add more Hoisin Garlic sauce if desired.
  • 8.
    Serve immediately.
